Cold Chain for Premium Ice Cream and Dairy
Premium ice cream demands the most uncompromising frozen chain in this entire overview. While frozen meat and fish allow some leeway, -18°C is the absolute maximum for ice cream, and we aim for colder to build in a buffer against inevitable warming during handling. We generously dose dry ice, use packaging with thick insulation, and plan the shortest possible route with minimal handling stops.
Fresh dairy follows a completely different regime: cheese, butter, and milk products travel chilled between 36°F and 45°F and must never freeze, as freezing damages texture and emulsions. We carefully monitor the distinction between these two regimes for each shipment, as any mix-up leads to spoilage.
Customs and Dairy Regulations
Dairy and premium ice cream are products of animal origin subject to veterinary import controls. Shipments from outside the EU must pass through a border inspection post with a health certificate and TRACES registration; within the EU, free movement applies without inspection. Ice cream and desserts containing milk ingredients are treated as dairy by customs, so the same rules apply.
A noteworthy challenge more common with dairy than other frozen goods is composite products. A dessert containing dairy plus, for example, egg, fruit, or chocolate can fall under multiple product regimes, complicating certification. We determine in advance under which category a product falls and which certificates are required, so shipments don’t get held up by unexpected inspection demands.
